Moringa Puff puff
Ingredients
- For Moringa Puff puff
- 31/2 cups all purpose flour
- 1 tbsp dry active yeast
- 1 cup warm moringa juice(fresh moringa,wash,blend,sieve)
- 1 tsp baking powder
- 1 tsp powdered ginger
- 1 tsp powdered cayenne pepper
- 1 small onion(chopped)
- 1/2 cup sugar
- Pinch salt
- Peanut oil for frying
- 2 tbsp warm water
Instructions for preparing Moringa Puff puff
- Sieve flour, baking powder into a clean bowl
- Add yeast to warm water in a separate bowl and mix. Allow to sit for 5mins until frothy
- Add sugar, salt, ginger and pepper to flour and mix all together
- Make well at the center of the flour, pour in the yeast mixture and mix well
- Add moringa juice bit by bit until a slightly running batter is achieved.
- Cover and place in a warm place to rise for 45mins
- Punch batter to release air and add chopped onions.
- Place pan on heat source, add oil for deep frying. Scoop batter gently into hot oil(don’t overcrowd)
- Allow to fry on low heat in order to allow the inside to cook properly. Flip and fry both sides until golden brown
- Place on a paper towel in a colander to drain excess oil. Repeat same process until all batter is finished (don’t forget to reduce heat as oil is now very hot)
- And our puff is ready. Serve hot and enjoy with chilled drink of choice. I did enjoyed mine with chilled tamarind juice
