Moringa Mushroom Muffins

Moringa Mushroom Muffins make an easy snack for kids, either in school or at home. But most commercially available muffins have loads of sugar and fats (even transfats) that make it quite an unhealthy choice. Muffins when made at home easily lend themselves to all kinds of healthy modifications, make them sweet or savoury, Try it out for a tea party or for your kid’s lunchbox. 

Moringa tree is also known as the ‘miracle tree’ and there is a good reason why. The leaves, fruit, sap, oil, roots, bark, seeds, pod and flowers of the tree have medicinal properties. The products from the tree have many uses. It is also known as the ‘drumstick tree’. The Moringa leaves find many uses in Indian cuisine as they are versatile and can be incorporated in the diet in many ways. 

Ingredients

for Moringa Mushroom Muffins
  • 1 table spoon of MORINGA POWDER
  • 100g of Chanterelle Mushroom
  • 6 eggs
  • 1 tomato
  • 1 bell pepper
  • 3 spring onions
  • 1 tsp salt
  • Shredded Cheddar Cheese
 

INSTRUCTIONS

  1. Preheat oven to 200°C
  2. Dice bell pepper, onions, and tomato
  3. Cut the mushrooms and add it
  4. Combine 6 eggs with the Moringa Powder in bowl and mix well
  5. Mix in vegetables and add the salt
  6. Pour egg mixture into 6 slot non-stick, greased muffin tin (or use greased paper muffin cups if necessary)
  7. Top with amount of cheese desired
  8. Bake for 15-18 minutes until the tops are firm to the touch
