Moringa Coconut Ice Pops

Summer is here! And we are cooling down with these Moringa Coconut ice pops! They are full of ingredients to support your skin, digestion, and help you reduce stress! Enjoy these ginger covered green pops all summer long!  

Ingredients

  • For Making Moringa Coconut Ice Pops : 
  • 2 cups full fat coconut milk
  • 1/ 3 cup sugar
  • 1/ 4 teaspoon vanilla extract
  • 1 teaspoon fresh ginger
  • 1 tablespoon moringa powder
  • pinch of salt
 

Instructions

  1. In a medium saucepan, combine coconut milk, sugar, vanilla and ginger over medium low heat. 
  2. Stir frequently until sugar is completely dissolved, 5-7 mins.
  3. Reduce to low heat and add moringa powder and stir until fully incorporated. 
  4. There should be no lumps.
  5. Add a pinch of salt and continue stirring for an additional 3-5 minutes. 
  6. Remove from heat and set aside. 
  7. Let mixture cool to room temperature.
  8. Once cool, add mixture to a blender or use an immersion blender and blend for 2-3 minutes. 
  9. This reincorporates the fat and allows for creamier ice pops.
  10. Pour mixture into molds and freeze for 6-8 hours.
  11. Once frozen you can enjoy directly out of the popsicle mold or finely grate fresh ginger on top first to add a little extra pop on the palate.
