Moringa Chicken Corn Soup
Moringa Chicken Corn Soup is a spin off of my mother’s Chicken Corn Soup. Chicken Corn Soup is a comfort soup. This soup is sure to satisfy a craving on a cool day or boost your strength when battling an illness.
Ingredients
- For Making Moringa Chicken Corn Soup :
- 10 cups chicken broth Homemade or store bought
- 1.5 pounds cooked chicken Remove from bone and shred or chunk
- 2 Tbsp garlic minced
- 3 medium onions chopped
- 2 cups celery chopped
- 1.5 cups carrots chopped
- 2 Tbsp olive oil or butter
- 4 cups corn Added flavor: Grill about 10 ears of corn; remove kernels
- 3 cups fresh Moringa leaves packed
- 1.25 tsp ground nutmeg
- salt to taste
- black pepper to taste
- quinoa, rice, egg noodles optional
Instructions
- Prepare broth, chicken, and corn according to preference. Set aside.
- Chop onions, carrots, and celery. Mince garlic.
- Heat olive oil/butter in large pot over medium heat.
- In large pot, sauté onions and garlic for several minutes.
- Add carrots and celery and sauté additional 10-15 minutes.
- Pour chicken broth over vegetables in large pot.
- Bring to a boil. Reduce heat and simmer 20-25 minutes or until vegetables are tender.
- Add 4 cups of corn to the broth. Simmer additional 5 minutes.
- If available, use immersion blender to bring soup to desired consistency.
- Stir in fresh Moringa leaves.
- Again if available, use immersion blender briefly.
- Stir in nutmeg. Salt and Pepper to taste.
