Drumstick Leaves Potato Curry

Drumstick Leaves Potato Curry is a simple and comforting Potato curry that is made using authentic ground spices. You can serve this delicious recipe with hot rice, roti, chapatti .

Ingredients

  • For Drumstick Leaves Potato Curry :
  • 2 Cup Drumstick Leaves
  • 1 Cup Potato
  • 2 Nos Tomato
  • 1 No Onion
  • 10 Cloves garlic
  • 15 Nos Cashew Nuts
  • 1/2 Cup Grated Coconut
  • 5 Nos Dry Chilies
  • 1 Tspn Urad Dal / Ulundu Paruppu
  • 1 Tspn Bengal Gram / Chana Dal
  • 1 Tspn Mustard Seeds / Kadugu
  • 1 Tspn Cumin Seeds/Jeera
  • 1 Tspn Coriander powder
  • 1/2 Tspn Turmeric Powder
  • Spring Curry leaves
  • Salt to taste
 

Instructions

  • For Making Drumstick Leaves Potato Curry :   
  1. Heat a tablespoon of oil in a pan and add in the mustard seeds, Cumin Seeds, urad dal and Chana dal, Let it splutter and wait till the dal turns golden brown. 
  2. Then Add in dry red chillies and Crushed Garlic.
  3. Add in the curry Leaves and finely chopped onions . 
  4. Saute till the onions are soft and slightly brown. 
  5. Then add tomatoes and saute till it becomes soften.
  6. Add turmeric and coriander powder and saute for a minute then add in the cleaned, washed and dried drumstick leaves.
  7.  Saute in medium flame until all the moisture has escaped and the mixture is completely dry.
  8. Then Add smashed Potato and saute for 2 minutes then add the Cashew nut paste and saute for 2 minutes. 
  9. Then add in the coconut paste and saute for 2 Minutes.
  10. Yummy Murugai Potato is ready to serve.
  11.  It can be served as poriyal with Rasam and sambar. 
  12. Also it can be served for Chapathi’s and dosai.
 

 

Recipe Note

  • Instead of potato you can also add sweet potato to get different taste.
