Moringa Puff puff

Ingredients

  • For Moringa Puff puff
  • 31/2 cups all purpose flour
  • 1 tbsp dry active yeast
  • 1 cup warm moringa juice(fresh moringa,wash,blend,sieve)
  • 1 tsp baking powder
  • 1 tsp powdered ginger
  • 1 tsp powdered cayenne pepper
  • 1 small onion(chopped)
  • 1/2 cup sugar
  • Pinch salt
  • Peanut oil for frying
  • 2 tbsp warm water
 
Instructions for preparing Moringa Puff puff
  1. Sieve flour, baking powder into a clean bowl
  2. Add yeast to warm water in a separate bowl and mix. Allow to sit for 5mins until frothy
  3. Add sugar, salt, ginger and pepper to flour and mix all together
  4. Make well at the center of the flour, pour in the yeast mixture and mix well
  5. Add moringa juice bit by bit until a slightly running batter is achieved.
  6. Cover and place in a warm place to rise for 45mins
  7. Punch batter to release air and add chopped onions.
  8. Place pan on heat source, add oil for deep frying. Scoop batter gently into hot oil(don’t overcrowd)
  9. Allow to fry on low heat in order to allow the inside to cook properly. Flip and fry both sides until golden brown
  10. Place on a paper towel in a colander to drain excess oil. Repeat same process until all batter is finished (don’t forget to reduce heat as oil is now very hot)
  11. And our puff is ready. Serve hot and enjoy with chilled drink of choice. I did enjoyed mine with chilled tamarind juice
