Moringa Chutney

Ingredients

For Moringa Chutney:

  • 1 tsp cold pressed coconut oil
  • Green chili (as per taste)
  • ½ cup moringa (drumstick) leaves washed
  • ½ cup grated coconut (preferably fresh)
  • 1 tbsp tamarind
  • 1 tsp himalayan pink salt
  • 1 tsp organic jaggery .

For tempering :

  • 1 tsp cold pressed coconut oil
  • ½ tsp mustard seeds
  • ½ tsp cumin
  • ½ tsp urad dal
  • ½ tsp hing (asafoetida)
  • 3 to 5 clean curry leaves

Instructions for preparing Moringa Chutney :

  1. In a heating pan, add oil. Once oil is heated, add green chili as per needs
  2. Add clean washed Moringa leaves
  3. Saute well for 2-3 mins as the leaves start wilting. Do not over cook
  4. Transfer this mixture to a blender
  5. Add grated coconut, small ball size tamarind, salt and jaggery
  6. Add little water and blend into a fine paste.

To prepare Tempering :

  1. In a small heated pan, add oil
  2. Once oil is heated, add mustard, cumin, urad dal, hing and curry leaves and saute well till it splutters
  3. Finally, add the tempering to the blended chutney.
  4. Enjoy the chutney with roti, idli, dosa or steamed rice and ghee.
