Moringa Chutney
Ingredients
For Moringa Chutney:
- 1 tsp cold pressed coconut oil
- Green chili (as per taste)
- ½ cup moringa (drumstick) leaves washed
- ½ cup grated coconut (preferably fresh)
- 1 tbsp tamarind
- 1 tsp himalayan pink salt
- 1 tsp organic jaggery .
For tempering :
- 1 tsp cold pressed coconut oil
- ½ tsp mustard seeds
- ½ tsp cumin
- ½ tsp urad dal
- ½ tsp hing (asafoetida)
- 3 to 5 clean curry leaves
Instructions for preparing Moringa Chutney :
- In a heating pan, add oil. Once oil is heated, add green chili as per needs
- Add clean washed Moringa leaves
- Saute well for 2-3 mins as the leaves start wilting. Do not over cook
- Transfer this mixture to a blender
- Add grated coconut, small ball size tamarind, salt and jaggery
- Add little water and blend into a fine paste.
To prepare Tempering :
- In a small heated pan, add oil
- Once oil is heated, add mustard, cumin, urad dal, hing and curry leaves and saute well till it splutters
- Finally, add the tempering to the blended chutney.
- Enjoy the chutney with roti, idli, dosa or steamed rice and ghee.
